Here is my first What’s Cookin’ Wednesday? Blog!
We’re going to start off with something super simple, and healthy!
Ingredients you’ll need:
1 box of pasta of your choice
1 yellow squash
1 red bell pepper
1 yellow bell pepper
1 box of fresh [sliced] mushrooms
½ red onion
1 jar of pasta sauce of your choice
2-3 chicken breasts, defrausted
First, let water in two large pots come to a boil.
While waiting for the water to boil, chop all of your fresh vegetables. Put all veggies except the mushrooms and onion in a sauté pan that has been slightly preheated with 2 tablespoons of olive oil. Season with salt and pepper. You will want to keep the temperature failry high, but don’t burn yourself with spitting oil! (Medium high is a good standard).
Around the same time, when water is boiling in both of your pots, add the chicken breasts to one pot, and pasta to the other. Reduce heat to medium-medium high (depending on your stove) to avoid spillage. Meanwhile, get a small pot for your sauce, and heat according to package directions (a low heat avoids spattering sauce bubbles).
Keep an eye on your veggies, stirring frequently. About five minutes in, add mushrooms and onions (these veggies cook faster, so add them later to avoid making them soggie!)
Cook pasta al dente according to package directions (8-10 minutes usually). Drain pasta, and put back into pot.
Drain chicken (unless it does not look done for some reason). Allow to cool slightly by running under cold water and rest.
Your veggies should be done by now. Drain excess oil off of your veggies, and add them to pasta.
Chop up your chicken into bite sized pieces and add to pasta.
Add your heated sauce of choice.
